These two recipes and their bean characters are part of the history and geograhy lesson in the new education kit for elementary teachers produced by the Northarvest Bean Growers Association.
Charlottee Iiams, PhD, Professor Emeritus, Elementary Education, Moorhead State University, who wrote most of the lessons, includes these two recipes to represent international foods that use dry beans.
Frijoles Negros may be served over white rice both to include a grain and create an attractive color contrast.
Fuul Medames combines pinto beans and eggs to make a complete protein. It is a simple, delicious dish. Consider making it using canned beans or leftover home cooked beans for an easy, light lunch or supper.
