North Dakota School Food Service members attend a seminar on the Dakota Diet, which features dry beans.

The Northarvest Bean Growers Association participated in the North Dakota Nutrition Council June 3.

The theme was “From Thought to ACTION: Making Nutrition Changes in the Community.” Everyone was encouraged to “Harness the Power of Partnerships to Build Nutrition Policy in Our Communities.”

N
ortharvest also furnished large quantity recipes for a Breakfast Burrito and Veggie Soup for Dr. Jane U. Edward’s talk on “The Dakota Diet’ at the ND School Food Service Association’s meeting June 7 and 8.

Dr. Edwards, LRD, is an Extension Specialist-Nutrition & Health for the NDSU Department of Health, Nutrition. She encouraged an overflowing room (setup for 28 people; 42 actually came) to use North Dakota food products in their meals. She illustrated the Dakota Diet with a food pyramid and encouraged use of locally grown products because they promote good health and may reduce the risk of chronic diseases such as heart disease, Type 2 diabetes and cancer.

P
articipants were given a chance to revise usual school food menus to include Dakota Diet products. Lynne Bigwood offered samples of the Breakfast Burrito at the food exhibit the next day.

Dr. Jane U. Edwards developed a “Beans: Agriculture to Health” curriculum for the County FCS Extension Specialists in North Dakota to use this coming year.

The Northarvest Bean Growers Association did a peer review of the materials as they were developed and furnished 53 of Northarvest’s teaching kits for the staff.
